Binchō-tan

BINCHŌ-TAN

Binchō-tan, or “white coal,” is the essence of our cooking at KōL Izakhaya. Made through a meticulous process of kiln-firing high-quality wood, it becomes a ceramic-like charcoal that burns white-hot, emits almost no smoke, and infuses food with rare, delicate flavours. Revered in Japanese cuisine, it elevates every dish with refined depth and purity.

With its metallic ring when struck and little-known molecular structure, Binchō-tan carries an air of mystique and charm. As the fuel that powers our kitchen, it embodies our commitment to enhancing flavours and crafting unforgettable culinary experiences.
